Best Vegetarian Lunch Recipes—Rajma with Rice for 2 People

Ingredients

  • 2 cups rajma (kidney beans)
  • 2 cups of rice
  • 4 onions, 3 tomatoes (pureed)
  • 2 tsp. ginger-garlic paste
  • Mix spices like cumin, turmeric, coriander, and Rajma masala.
  • Mix the salt and garnish with coriander leaves.

Instructions:

  • Rajma soaks overnight; pressure cooks
  • Mix onion, ginger garlic paste, and cumin in oil and sauté until it gets golden brown.
  • Mix spices and tomatoes and cook till oil separates.
  • Mix rajma and cook gently for 20 minutes.
  • Rice cooking is separate.
  • Serve rajma and rice along with a garnish of coriander leaves.

Chole Bhature for 2 People 

Ingredients –

  • 2 cups challah
  • 3 cups of flour 
  • 2 cups of yogurt
  • 3 onions, 3 tomatoes (pureed)
  • 2 tsp. ginger-garlic paste
  • Mix spices like cumin, turmeric, coriander, chili, and garam masala in oil.
  • Add salt as per taste.

Instructions:

  • Soak chola overnight and pressure cook till soft.
  • Mix onion, ginger, garlic paste, and cumin in oil till it gets soft.
  • Mix spices with tomato puree and cook till oil separates.
  • Add chola, and mix for 20 minutes.
  • For bhatura, add flour, salt, and yogurt with water to make a soft dough and fry in oil.
  • Garnish with coriander leaves and serve.
